Jamón Ibérico dry ham (Spanish ham) is a type of ham from the Iberian pig, much appreciated in the gastronomy of Spain often considered as an article of haute cuisine and gastronomic luxury. 

Iberian Ham and Serrano Ham

The ham of 100% Iberian acorn has an iron content more digestible than the lentils, contains the same content of oleic acid as virgin olive oil. The cuddle and care that the process of natural elaboration and curing time provide the body with vitamins (B1, B6, B12), its antioxidant power, its effect on the levels of bad cholesterol and its high content in Omega 9. It is a heart-healthy product. According to a study in which Cinco Jotas (a premium Spanish Jamón Iberico producer) dry ham participated, comparing the nutritional values ​​of 100 grams of a black leg ham with those of other heart-healthy foods such as walnuts, lentils, salmon, olive oil, chicken or apples. This study was found that this amount of Jamón Ibérico accumulate less calories than the same quantity of boiled lentils, olive oil or walnuts; less cholesterol than grilled chicken or salmon; and also less sodium than lentils or grilled chicken.

Quality varieties of Jamón Ibérico dry ham

Feding the pig is so important that this ham is classified basically according to the amount of acorn that has consumed before the slaughter. According to regulations extended and established from 2014, in order to avoid possible confusion to the final consumer, a common labelling is established for all producers in which the slaughterhouse itself marks each of the pieces with an inviolable clamp (flange) of established colour that will specify the quality of each of the products.
