The level of fat is slightly higher than that of other sausages and the chopped, of intermediate thickness, makes it to integrate evenly. This meat will be marinated in port wine with pepper, salt and a small amount of added sugar. The mixture will be introduced into gut and left to dry and mature in the cellars for a period of between five and six months. After this process the Iberian sausage will be at the optimum point for your enjoyment.
