Carpaccio of Presa / Tapa / Bola: Piece of meat obtained from the head of loin with oval shape. Very infiltrated in fat, with fine muscle fibers that make it very tender and pleasant palate. Its color is intense red. Approximate weight 600g. For proper preparation, thick medallions should be made or opened in the middle and marked. It is recommended to prepare it on the grill, combined with sauces based on wines. Marida very well with foie gras and Iberian ham shavings.
