"Paleta de bellota 100 % ibérico", is the highest range of Iberico dry hams, identified with a black label, are shoulders from pure Iberian pigs fed in the dehesas based on acorns and pastures. These pieces are the only ones that can be called black label pieces, according to the new regulations mentioned above. On the bone weights range between 3.5 kg to 5.5 kg for shoulders. The piece has a minimum cure of 18 months up to 48 months. Designation of origin: Pedroches, Jabugo, Guijuelo or Extremadura.
