Characteristics of Iberian Shoulder:100% Iberian acorn-fed dry ham, Black Label, is the highest range of Jamón Ibérico hams, pure Ibérico pigs fed in the dehesas based on acorns and pastures. 

"Paleta de Bellota iberico", provided with a red label, will identify the pieces that are of Ibérico breed but not of 100% Ibérico pigs,(50% Ibérico minimum) and fed on acorn and grass during the "montanera" season.

"Paleta de Cebo de Campo ibérico", will be identified with a green label, like the previous one come from Iberian pigs, but in this case fed extensively in dehesas, which accompany their feeding with natural grasses, their meat is seen also favored by the work they do in freedom.
