It is a natural product, true olive juice, depending on the conditions of maturation, harvesting and obtaining the so-called EXTRA virgin olive oil. It has an intensely fruity smell, a color dominated by greenish tones, and a slightly bitter and spicy taste, as a guarantee of conservation of all its natural components. Its acidity, depending on the campaign, is usually 0.2º. Involved in manufacturing olives harvested in the first week campaign in optimal ripening stage.
