"Serrano" means "from the mountains", since it is in these mountainous areas that it is best cured in the open air. This same product is also called palette or shoulder when it is obtained from the front legs. The pigs are usually white pigs of the Duroc, Pietrain, Landrace or Large White breed, and are fed with feeds made mostly with cereals. On the other hand, the origin of the raw material does not have to be Spanish. The E.T.G. "Serrano ham" is a standard of the U.E. that only protects the method of making this product.
