"Paleta Serrana", The ham is the food obtained by the curing (salting and drying) of the hind leg of the pig. "Serrano" means "of the sierra", since it is in these mountainous areas where it is best cured. This same product is also called palette or shoulder when it is obtained from the front legs. The hams are the hind limbs of the pig. This includes the coxal bones, femur, patella, tibia, fibula, tarsus and, optionally, metatarsus and phalanges, as well as the muscle mass and the fat that surrounds them. The entire production process, from slaughter to curing, is carried out in accordance with the sanitary legislation in force in the European Union (Directives 64/433 / EEC and 77/99 / EEC). The pigs are usually of the Duroc, Pietrain, Landrace or Large White breed, and are fed with feeds made mostly with cereals. On the other hand, the origin of the raw material does not have to be Spanish. The E.T.G. "Serrano ham" is a standard of the U.E. that only protects the method of making this product.
