Dry ham or shoulder of Iberian pig acorn-feed, identified with a red label, the pieces that are of Iberian race but that they are not to the 100% (at least 50% Iberian), and fed exclusively in open pasture with acorn and grass in the time of “montanheira”.

Hams: The curing time for Iberian hams oscillate between 15 and 36 months, they enjoy a greater softness and complexity in their flavor and their weights with bone range between 5,75Kg to 8,5 Kg.

Shoulders: Due to its smaller size with respect to hams, its curing time oscillates from 12 to 24 months, enjoy a greater intensity and power in its flavor and its weights with bone range between 3,5Kg to 5,5 Kg.
